Vegan breakfasts that will blow your mind!

“Veganism is a way of living, which seeks to exclude, as far as is possible and practicable, all forms of exploitation of, and cruelty to, animals for food, clothing or any other purpose.” – The Vegan Society.

Here are a few easy vegan family breakfasts to help kick start the day:

1. Wake-up French Toast – serves four

– 1 ripe banana

– 1 cup unsweetened almond milk

– ½ teaspoon cinnamon

– ¼ teaspoon vanilla

– 8 slices of vegan whole grain bread

– 1 cup grapes

– 4 strawberries, sliced

– 1 passion fruit, sliced

-1 orange, sliced

– 1 kiwi, sliced

– 8 tablespoons maple syrup

1. In a small bowl, use a fork to mash the banana. Add the almond milk, cinnamon, and vanilla, and mix together well.

2. Heat a pan to a medium heat and lightly spray with cooking spray. In the banana–almond milk mixture, dip one slice of vegan bread at a time making sure to wet both sides.

3. Place bread on the warm pan. Cook on each side for about four minutes or until golden brown. Serve two pieces per person, with lightly drizzled maple syrup and top with fresh fruit.

2. Sunshine Cinnamon Nut Quinoa – serves four

– 1 cup unsweetened almond milk

– 1 cup water

– 1 cup quinoa (note: rinse quinoa)

– 2 cups fresh blueberries

– ½ teaspoon ground cinnamon

– ⅓ cup sliver almonds, toasted

1. Combine milk, water and quinoa in a medium saucepan – bring to a boil over high heat. Next, reduce heat to medium-low, cover the saucepan and simmer for 15 minutes or until most of the liquid is absorbed. Turn off the heat and let stand covered for five minutes.

2. While the quinoa cooks, roast the almonds and cinnamon in a 180°C oven for four to six minutes or in a dry skillet over medium heat for about two to three minutes.

3. Transfer to four bowls and top with almonds and blueberries. You can add more almond milk, if desired.

3. Chocolate Blueberry Muffins – makes 12

– 1½ cups flour

– 4 teaspoons raw sugar

– 2 teaspoons baking powder

– ½ teaspoon salt

– 1¼ cups unsweetened coconut milk

– 1½ teaspoons egg replacer

– ½ cup unsweetened cocoa powder

– ¼ cup applesauce

– ½ cup frozen blueberries

1. Preheat oven to 200°C. Spray a 12-cup muffin tin with nonstick cooking spray.

2. In a large bowl, mix all of the dry ingredients. In a small bowl, mix applesauce and coconut milk. Add the wet ingredients into the dry ingredients and stir to combine. Add the berries as you mix.

3. Using a ¼ cup-measuring tool, scoop the batter into the muffin tins (about ⅔ way full).

4. Bake for 20-25 minutes or until toothpick inserted in the center comes out clean.

5. Cool for five minutes in the tin, then remove and let cool on a rack.
